Roasted Asparagus and Tomatoes
INGREDIENTS
Olive oil mist
1 pound asparagus, trimmed
½ cup cherry or grape tomatoes
1/3 cup sliced shallots
1 ½ tsp chopped fresh thyme
¼ tsp salt
¼ tsp pepper
DIRECTIONS
Combine asparagus, tomatoes, shallots, tyme, salt and pepper on a jelly roll pan, and coat lightly with olive oil mist. Bake at 400 degrees for 6 minutes or until crisp and tender.
